When grilled over charcoal, far-infrared rays bake the proteins on the surface at a high temperature, trapping the juices inside.
This heat is then transferred to the inside of the meat so that the outside is crispy and fragrant, while the inside is soft and fluffy, and the umami flavor is preserved.
